Slow Cooker Coconut Curry Butternut Squash Soup Garnished with Cilantro
It is nice to come home to the aroma of this soup. Very welcoming!
Load the following ingredients in the slow cooker before you leave for work in the morning and be excited to walk in your door.
Ingredients
2 table spoons coconut oil
1 pound butternut squash peeled and cut into 1 inch cubes
1 small head of cauliflower cut into 1 inch pieces
1 onion sliced
1 tablespoon curry powder
1/2 cup no added sugar apple juice
4 cups vegetable broth
1 can coconut milk
1 teaspoon salt
1/4 teaspoon freshly ground white pepper
1/4 cup chopped fresh cilantro
Combine all of the ingredients in a slow cooker and cook on low for 6 hours or high for 4 hours.
Serve the soup as is. Garnish with cilantro.
