Anti-Inflammatory Lentil, Ginger and Carrot Soup

Ingredients
1 teaspoon coconut oil
2 carrots, sliced thin
1 small white onion, peeled and sliced thin
2 garlic cloves, peeled and sliced thin
1 tablespoon chopped fresh ginger
3 cups water or vegetable broth
1 (15 ounce) can of lentils drained and rinsed
2 tablespoons chopped fresh cilantro, or parsley
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
Directions
In a large pot over medium-high heat, melt the coconut oil. Add the carrots, onions, garlic, and ginger and sautée for 5 minutes.
Add the spring water to the pot and bring to a boil. Reduce the heat to simmer and cook for about 5 minutes, or until the carrots are tender.
Add the lentils, cilantro, salt, and pepper. Stir well, and serve.
