Simple & Delicious Asparagus & Navy Bean Soup

Ingredients

Bag of organic navy beans

1 stalk organic asparagus

16 ounces organice beef broth

Olive oil

Oregano

Salt

Cracked Pepper

Instructions

Soak navy beans for about 30 minutes. Then add to a quart of water in a large pan with heat on low, cover the pan and allow to cook slowly for about 90 minutes.

Cut aspragus into 1 inch sections, sautee Asparagin in a drizzle of olive oil and season with salt & cracked pepper.

Drain navy beans, add sautéed asparagus and beef broth and bring to a simmer for about 10 minutes. Season with oregano and enjoy!
