Lentil Salad
Ingredients
8 Ounces of lentils
1 Small onion quartered
1 Bay leaf
Bone broth
1 Small red onion finely diced
2 Tomatoes finely diced
2 tsp Balsamic Vinegar
2 tsp Olive oil
Salt and Pepper to taste
Instructions
Clean parsley leaves. In a blender, puree parsley and gradually add olive oil and seasoning.
In a sauce pan, combine lentils, onion, bay leaf, salt, and pepper. Cover beans with bone broth, cook until tender. Drain and discard onions and bay leaf.
Combine cooked lentils with red onion, tomato, basil, vinegar, oil, and salt and pepper. Serve with grilled prawns and garnish with parsley sauce.
