Roasted Butternut Squash Soup
This soup is so full of health benefits that warm and nourish the soul. It is a very simple and festive way to enjoy the multiple benefits of Butternut Squash, perfect for the season.
Ingredients
1 Large Butternut Squash
2 Carrots
3 Stalks of Celery
1 Large Onion
5 Cloves of Garlic
6 Sage Leaves
6 Sprigs of Thyme
1 Sprig of Rosemary
1/4 Teaspoon Cayenne Red Pepper
Salt and Pepper to Taste
2 Table Spoons Olive Oil
31/2 Cups Vegetable Stock
Directions
Combine vegetables and olive oil in a pan. Remove the stems from the herbs and add them to the vegetables. Roast vegetables and herbs for an hour at 350 degrees. Transfer vegetable mix into a blender, add 1 cup of vetable stock, puree mix. Transfer ingredients into a saucer and add the remaining vegetable stock, simmer on low for 10 minutes. Add additional fresh herbs to garnish and serve.
